From a technical standpoint it might be possible to hack and overwrite the firmware on some cards to change the name but this could make it difficult or impossible to install device drivers.
During the installation of a piece of hardware, the OS reads the name of the device as it was burned in by the manufacturer. This name is essential in choosing the proper device drivers.
